Made from sugar cane, treacle is used in the most diverse food delicacies of Madeira.
The origins of Madeira’s treacle date back to the heyday of sugar production on the archipelago, witnessing its History. As the Portugese name “mel de cana” [cane honey] implies, this product comes from the sugar cane that is introduced in two mills known as sugar cane mills, where the cane juice, called “guarapa” , is extracted, which is filtered and boiled in clarifiers. Then the guarapa enters the evaporators to continue the cooking and evaporation process of the water still present. On the last stage, a second cooking and a final filtration take place before the introduction of the syrup in the vacuum boiler. At the end the treacle remains and cools naturally in a depository.
This is a food rich in several vitamins, including Phosphorus, Magnesium, Calcium, Iron, Vitamin PP, Vitamin B2, Copper, Vitamin B1.
